Who needs the snake method when you have one of those awesome Offset Plates from JGBBQ! Used only 1 chimney full. Shin and necks sitting pretty at 160 internal after 6 hours and still have more charcoal going strong.
I had a offset smoker and a kettle with the JG offset plate and I can get the same results in the kettle with the offset plate so I ended up selling my offset smoker
I’m a big fan of the JG BBQ plate, it’s almost like cruise control for your weber. I got the pit temp up to about 240 before putting in the ribs, a couple of vent tweaks after the meat went in and it settled on low 250s and hardly moved all day
